We defined a calendar for each conference room available to
users. Everyone has rights to add an entry for a meeting in
such a room.

Our problem is that, given that these users have rights to add a
meeting into that calendar, they can erase others' entries

Is there a way to let people put an entry into a calendar and
be the only one, except the administrator, to be able to remove
it thereafter?

In Exchange server I believe they call this "Resource Calendaring" or tracking or something like that. While for us, it's not a highly needed feature, I do believe it would be very cool for Kerio to add it to their collaboration tools. I'm going to submit a feature request and suggest you do the same.
