I have been trying to setup Kerio as a study on mail servers that may represent an alternative to Microsoft Exchange, so I have installed Kerio on Windows XP Pro. Thus far I have the server running, and one client. My main question is how to setup Kerio to send and receive external email to and from any domain.
I have consulted your setup guide, but it tells me of the setup options without offering real guidance in terms of the correct choices to make in order to achieve a successful setup.
I would really appreciate your help on this matter.

It's mostly a matter of getting the DNS right. For successful sending of mail your DNS PTR record (reverse DNS lookup) should be stup correctly. For receiving mail your DNS MX record should be setup correctly. (Mind you, this is not something you setup yourself, this should be setup correctly in your ISP's DNS...)

That's the crux of it.
