I have users who are subscribed to about a dozen calendars and I'm looking for a way to streamline their workflow.

Is there any way to group the "~username" folders into a single folder so there aren't a dozen folders cluttering up the screen?

I don't think so.

But I like the idea: the ability to close/open all ~folders with one click.

If you get the new version of Outlook - 2007, you can view calendars in "Overlay Mode" which superimposes calendars on top of one another, with nice colour coding for which user has which appointments.

Overlay or side by side mode? All calendars are called Calendar so it's difficult to see which one belongs to who...

thats very true - its annoying to not be able to name the calendars according to the username...i assume this is on the to-do list
