We have a client who is very interested in migrating from Exchange to Kerio. They've expressed a need to have near 100% up time on their mail services.

What's the best way to accomplish this? Are there features built-in to the kerio server to allow for HA or am I looking at having to use linux clustering or something similar?

Kerio itself doesn't support HA, however if you know how to implement IPFailover and or some sort of Linux clustering you can achieve your goal.
