Are you saying that other users have access to the server???
Why would this be allowed.
The server should only be accessible by email administrators, and maybe some others who need authority to access it.
Users should only have access to email from a mail client, using their own assigned userid and password.

There is always going to be someone in charge of the machine who can do anything they want with the machine. Even if you manage to segregate such privileges among the accounts and manage to remove these authorities from the administrator, the person who can assign accounts and rights will always be able to change rights to allow access to what is supposed to be protected/hidden.

If you really need to protect such information, you should look into encryption methodologies.
