Tobit is very specific to the German market and is a groupware with added features. You can export all mails via the Kerio imap migration tool. I am not sure if you can export and import the calendar and address book simply, because last time I checked Tobit uses no standards and so it will be hard to export.

Concerning fax: Fax is dying and I doubt Kerio will ever implement something like that. The easiest solution for Germany would be to get a Lancom router (or several, depending on how many land lines you want to use for fax) and use their lancapi software to send and receive faxes. you might want to check how receiving faxes works if every user has it's own extension (MSN) to make sure everyone gets their personal faxes if it's how you got it set up.
