Currently I'm running KMS 6.7.0 on a Red Hat Professional 9 server. I would like to upgrade/change this to a Ubuntu 8.04 LTS server. Can I just use the kmsrecover tools from my backup after I install a clean Ubuntu installation? Is the KMS directory structure different on Ubuntu than it is on Red Hat? Are there any specific configurations for Ubuntu? I would like to use the Ubuntu Server 8.04 LTS distribution. Any comments would be helpful

You could simply copy the whole /opt/kerio/mailserver folder to a different location or disk, install your Ubuntu server, install Kerio and before starting Kerio on the new installation, move back the whole /opt/kerio/mailserver folder to the new server and start Kerio.
