I'm seeing the following repeat in the error log:

[07/Jul/2010 12:29:27] ASyncAirSync.cpp: ActiveSyncAirSync::ProcessCollection: Unable to open folder with CollectionId: 08129F18-EB83-40B7-8341-BC05D625B964
[07/Jul/2010 12:29:40] ASyncKeyDatabase.cpp: ActiveSyncKeyDatabase::StoreFolderInfo: FolderName is empty

Is there a way I can find which folder is causing the problem?

I believe that it is an email folder, but I've looked through all the folders in webmail and local client and can't find any with an empty folder name.

Or is there another way to fix it?

We had this once. Not sure what it's referring to or what causes it, but this resolved the errors for us:

- Delete the exchange account from the iPhone
- Turn off the iPhone (very important step we found!)
- Remove the iPhone from the User (Status -> Mobile devices)
- Re-add the account to the iPhone

Unfortunately, you won't be able to tell which user is causing the error - so you'll be poking in the dark doing this to handsets until it resolves itself.
