We have a few legacy users with very large calendar stores. When we transition these users from Entourage (which is becoming increasingly unusable beyond a certain data store size).

Linking the Apple App suite (Apple Mail, iCal, AddressBook) to the account via IMAP CalDav CardDav causes old caldnar items ro re-generate "accept" messages or even re-send invites.

I am currently researching a workaround that involves moving old Calendar data out of the path, however I am not sure if that will take care of it. Has anyone else had this issue?

How do you 'move' the data???

Is the calendar data not on the server, but moved from a local cal to the server based one, or do you import them??
Simply adding the Kerio account to the server should not do this!
