I have Kerio Connect setup with the mailstore being located on an iSCSI data store.

I would like to setup a second server in a load balance scenario for redundancy. Has anyone set this up or have any insight on the subject?

you can't load balance with the same mailstore unfortunately (Kerio is for SMB, after all...). What you can do is manually split up your users between two Kerio installs with separate stores and then use the distributed domain feature. One server will be the master server though, the server all the mail goes in and out from, but users can be distributed to the different servers (manually), having some load balancing.
