can I customize the greeting-text for voicemails? e.g. by replacing the WAV file?

You can change every voice mail box greeting thru the phone.
Dial voicemailbox (in our case 70) then it ask extension and password.
With options (zero) you can record an other greeting. Save it and your done.

Carlo is right, you can change the greetings in the voicemail's voice interface. You can also go to the Voicemail settings in the Admin GUI and decide whether callers should hear the greeting and instructions, just instructions, or just the greeting.

We would like to upload our Voicemail Greetings via a wav file as we have had them professionally recorded by an external company. Is this possible?

Hi,

You need to have an archive with voice prompts, the structure of the archive needs to meet the standard asterisk core sounds structure (see http://downloads.asterisk.org/pub/telephony/sounds/).

The archive can be uploaded to Operator in the Admin GUI, Advanced Options, Localization.
