Can someone tell me how to get rid of these receipts, sent to senders, and showing "This is an infomative message sent by Kerio MailServer 5.7.9...." along with all the internal info for our MX server ?

Also, where do all the discarded messages go ? (spam,vir,...).Is there some kind of trash/recycle bin somewhere?

There is no recycle bin for discarded messages (by Anti-Spam or Anti-Virus). If you want to keep those messages, use the "forward to Administrator" action insted of "discard the message".

You can change the wording of the DSN messages by changing the following file:

dsn-success.rpt in the "reports" directory

I don't know if it is possible to turn off DSN but I didn't find an option.

I just removed server hostname from these files. If anybody has info about how to disable this feature, I'm interested
