I have a user that gets unfocused when its dropping in emails, and want to click the "Get email" button in Apple Mail when there is a time slot for checking emails.

This worked great with their old mail server, but Kerio has push technology to the email client, so the setting how often to check for new mails is ignored.

Anyone know how to turn off push in Apple Mail (or for a specific user in the server)?

Just quit Apple Mail or disable the "new mail" sound!
Mountain Lion will have a DND feature.

Hm, he wanted it to work as before with his old email provider, so if someone has a better answer I'm still looking. Sending this to him in the meantime.

You should contact Apple technical support (or read manual for Apple Mail client).
Disable IMAP IDLE in account setting and set "Check for new messages" to "manual".
