Is there an uninstall utility for Workspace 2.0? Or do I simply go into the usr/local/kerio folder and delete the workspace folder? Do I need to adjust anything else after deleting the Workspace files?

did you try rpm -e kerio-workspace ?

Thanks. I'm not a Terminal expert. (That's why I'm removing Workspace - it's a little too hands-on for our needs.)
What will that command do?

That command would stop kerio-workspace and remove(uninstall) it. Assuming you are running it on a Linux system.
