We are considering switching from PRI to SIP trunking. We would do this primarily to reduce monthly costs.

The providers we can consider are Earthlink and ATT. However, neither is on the 'Tested SIP Providers' list.

Has anyone worked with these providers?

How cautious should I be moving forward?

I would get a cheap test account first before ordering the equivalent of a PRI. Also make sure you have enough bandwidth for your intended number of concurrent calls.
