I have a customer that has recently migrated from using an iCal server to Kerio Connect. They used iCal to created ICS files and then imported those ICS files into their respective calendars in Kerio Connect. Now all the events that came from the iCal server cannot be edited. What I have found in the files, is that the Organizer has a URN:UUID instead of their email address, could this be the cause of iCal not being able to edit the event now that it is on the Kerio Connect server?

Yes, this is exactly the cause. Event owner is identified by ORGANIZER field, which in Kerio Connect must be an email address.
