We have several sub-domains. Is there a way to set the source IP of outgoing mail based on the sender's domain?

Are all your subdomains on the same server?

I was wrong it can be set under Domains > Edit > Advanced > Bind to IP... this is the IP of the NIC not your public IP so you will need multiple NICS and some routing rules to make it work.
