Has anyone created a custom rule or script that searches inbound mail message text for a keyword/keywords and then either flags it as important or apply a rule set to it?

I don't see anything like this in the Admin, Web or Outlook client(s).

I'm old school, so I think SED/AWK for this job since Kerio uses a flat file structure.

I could start poking around in Kerio, but I'd rather not re-invent the wheel..

The natural way to do this would be a sieve script, but since Kerio doesn't implement the body extensions this is not possible. There also does not seem to be way to call scripts from the filters, so I guess you are out of luck.
On the mailserver level you could try to abuse Spamassassin, but that is not what I would call user-friendly
