I had this working before but haven't used it since I upgraded my Mac to Lion.

I d/led the latest kerio-api-php and replaced what I had. I had to enable PHP in the Lion httpd.conf and had to chmod the directories as the setup-config warned..

I'm putting in credentials and I know they work.. but every time I go to run and example it gives me "Before running code examples please, setup your login credentials"

I check the config.php and the right stuff is in there still.. php is working (or the tools/config-assistant/ wouldn't work at all), perms are right or it couldn't have put the credentials into whatever/config.php..

What might I be missing?

Yes, except for constant

Warning: date() [function.date]: It is not safe to rely on the system's timezone settings. You are *required* to use the date.timezone setting or the date_default_timezone_set() function. In case you used any of those methods and you are still getting this warning, you most likely misspelled the timezone identifier. We selected 'America/New_York' for 'EST/-5.0/no DST' instead

And i know I found that when I was working with this previously but I haven't found where to set that yet..

Yes, it's caused by using constant DATE_RSS in PHP method date(). Using that's a workaround and will be solved in next release.
