When adding to Outlook on Apple you have to enable various ports and services.

Once enabled it only shows EWS in control panel.

Does it only need EWS for Outlook to use calendars, contacts, emails and shared items?

Is it safe to disable pop, imap etc and still have it work?

Yes, EWS protocol requires only http(s), it means ports 80/443. By default https (port 443) is used, so port 80 can be also disabled.
