I am trying to find any information about creating a redundant setup for Kerio Control.

We have redundant NAS redundant LAN and redundant internet access lines but the computer running Control is still our single point of failure. It does not have to be an automatic failover (although this is ideal). We use a PC with the ISO option.

Having a cold standby is not great since any configuration changes would not carry over to the standby unit.

If you use Control as deafult gateway, some watchdog script, that pings server, and in case of server being offline rewrites your switches gateway settings. Implementation could vary.
