We have a user that is getting a tremendous amount of spam and therefore we would like to keep his AD user the same but change his email. I went to the Properties of the user in AD on the Kerio Connect Account tab and added the new one but only allows the old one as the default and can't remove. I looked around the forums but can't seem to find the right one to do what I need.

There will be always only one primary e-mail address, which is username<_at_>domain. All the others are just aliases.

If you want to completely remove this compromised e-mail address, you need to:
1) Create a new user (thus new e-mail address)
2) Remove the current user and select an option "Move the mailbox to someone else" - here you select the new user
