PostFix started up upon reboot of our server. I thought it was uninstalled during the setup but apparently not. What is the best way to disable it now that we are in production? Could you please include any commands that I'm going to need? I'm a centos novice.

I believe you can disable the postfix server with:
sudo launchctl unload -w /System/Library/LaunchDaemons/org.postfix.master.plist

enable with:
sudo launchctl load -w /System/Library/LaunchDaemons/org.postfix.master.plist
