In the archive tab of Kerio you can enable archiving by specifying a path. Under that option is the option to turn on arching and archive to a remote email address. Is there no way to just enable arching to remote email address? You can't hit apply with the path field blank, and I don't want to store the archived emails in a folder on our email server.

As a work around I connected a separate drive, specified that drive as the archive path, enabled my remote email address archiving option, hit apply, and then removed the drive so the path is no invalid. I have a bunch of errors in my log about the path being invalid, one per email sent, but it works as I want it to and the emails are being archived to my remote archive via smtp. However, this a pretty ugly hack.

Is there a better supported way to do this?

Yes, there is. Leave the path to the default store/archive directory (which always exists in default installation) and uncheck "Archive to local subfolder" option. No files will be stored there but the directory must exist as it tracks also access rights for users.
