Is it possible for users to go to old webmail after an upgrade (from 7.4.3) while still maintaining the "Last used" setting? I'd like them to not be shocked and to be able to explore on their own and then make the decision. Is there a link that I can send them to login that will always go to the old webmail? Some other way to force old on the first use?

Admin Console --> Advanced Options --> Kerio Connect Client --> Default Web Client

I don't think it's possible to provide a different URL. It's a case of educating users that an upgrade has taken place and that they can toggle back and forth easily by clicking on their name in the upper right corner and selecting Old Webmail Client
