One of our clients just called and advised us that they cannot accept tasks on their mobile phones, sent to them by other users.

They have iPhones and we have Android phones, but on both it seems to just show up as an email, with no option to accept or decline the task.

Is this a limitation of the phones/ActiveSync, or a limitation of Connect?

Neither phones nor Exchange ActiveSync protocols have capability to assign or accept task. This is possible only for calendar invitations, not tasks.

The strange thing was, that I replied to the email (didn't add any text), thinking that might've accepted the task, and when the other user received my reply, he actually did get a button asking him if he wanted to accept or decline the task (although it didn't work whichever one he selected).

The button wasn't present on the original email sent to me.
