I can't find anywhere in the documentation if newer client versions are backwards compatible to older server versions or visa-versa.

I assume newer clients can connect to older servers but older clients may not connect to newer versions of the server. Which will have an impact on the way we do our upgrades.

I've also noted from the release notes for 8.5.3 (cdn.kerio.com/dwn/connect/connect-8.5.3-5082/kerio-connect- notes-en-8.5.3-5082.pdf) that Outlook 2016 is supported from this version. I'm not sure if this means that previous versions of the Outlook connector wont work with Outlook 2016, or if versions of the server from this version onwards supports 2016 without the Outlook connector installed (albeit in a reduced capacity)

Any guidance, repoint to a previous post, or clarification would be gratefully accepted.

TIA

The Outlook Connector version should always match the server version.
And, as you already figured out, Outlook 2016 is supported since version 8.5.3.
