Is it possible to export the custom spam rules from one KC server so I can import them into another? What about drilling into the application directory and locating the settings there?

The spam rules from the Admin panel are stored in the mailserver.cfg file.
The <list name="HeaderFilter"> section, which can be a very large section of the file depending on the number of rules you have. Youcould copy that section from the one server's cfg file to the other server that is stoppped, then start the destination server.
