It is possible to create custom rule on server side to filter spam messages according to some string in mail header ? Not only From, To, Subject,... etc.
For example according to "Return-Path" record ?

Yes, in the custom rules of the spam filter the drop down menu is an editable field so you can input whatever header condition you want such as "Return-Path".

"From" includes both MAIL FROM (= Return-Path address) and From email header.
Return-path is added by delivery server so it makes very little sense to test it in spam rules as it equals to MAIL FROM in SMTP.
