I've set the DNS name in Kerio control and that works 100% so when looking up a client for instance srv-mail it will return the correct IP address and if I lookup srv-mail.local.domain this returns the correct address as well.

What I would also like is to be able to have a seconday domain out public domain so I can lookup mail.publicdomain.com and have it direct to srv-mail.local.domain.

I can't seem to find an option to set this can anyone advise

If I read this right, you seem to have an onsite mail server that uses a different host name internally on your network than it uses on the outside. If that's the case, why not just us the same host name internally and externally? I have been doing it this way for years. In the DNS section of Kerio Control, you can use the public host name, and then assign the LAN IP address to it so that all connections to the server on the LAN never go out to the internet. There really is no need to have a local domain and an external domain. Use the external (public) domain internally too. You will save yourself a lot of trouble.
