Can anybody tell me how to block clients from using live audio/video streaming ?

Find out which ports the application uses and write a policy rule to deny them.

Mostly webradio etc. run on port 80 (over here anyway), so blocking that port is not possible.

You could try to block certain URL's, for example *.ram for RealMedia ram-files. You could do this for a lot of streaming file types, but I guess you cannot block all webcasts this way.
