We receive our mails from another mailserver. If a mail was detected as spam it marks them with a custom flag like X-Spam-Symantec: YES or X-Spam-Level: ********.

I tried to insert this flag into Kerio's own Spamrules, but i did not find a way to add custom flags. I only have the chance to set up rules for from, to, subject, sender, received and x-envelope-to.
Is there any other way to create a rule for the tags above?

Yes, this is possible: Go to

Configuration > Content Filter > Spam Filter

and click "Add"

- Insert "X-Spam-Symantec" in the Description field

- Insert "X-Spam-Symantec" in the Header Field (don't use the drop-down list, just type it)

- Choose "contains substring" as Type

- Insert "YES" in the Content field

That's it.
