We have enabled the logging of SMTP conversations (client and server) via the debug log. This is a lot of data but it helps find problems when they occur. We have set the log to re-cycle every day so at least the file size doesn't grow forever.

What I'm wondering is:

1) Does the logging significantly affect performance?

and related to that

2) Are the client vs server conversations synchronous/one at a time (as they appear to be in the log) or are they asynchronous and just 'recapped' in the log as a group so we can read them more easily?

On a side note what I've noticed from this logging is that when you are sending to multiple addresses, Kerio will send them alphabetically by address.
