Hi, I've reading about installing and configuring a second/redundant mail server.

Is necessary to have a redundant second server a... to be both, first and redundant, kerio mail server? the same version?Can they be first one kerio and the second one exchange or sendmail o postfix?

It doesn't have to be. It can be any mail server you want. The problem you run into, though, is the different options, or lack of options available on the other server.

Sometimes spammers will select the server with the highest preference, knowing it's the backup server, in hopes of bypassing spam controls. If you don't have the same capacity for blacklists, SPF, custom rules, whitelists and blacklists, etc., you might find the spammers are getting completely around your spam protection.

Kerio has pretty good anti-spam features which many other mail servers don't have built in. If you use a second mail server that's not Kerio, or at least has all of the features that are built into Kerio that you use, you might find the anti-spam features are now useless.
